How It Works

  • Happy Friday!! Sometimes in our test kitchen we find amazing recipes that just don’t translate well into our business because they are best eaten at the time they are prepared. That’s where our new feature, “Fresh Fridays” comes in.  It is our goal to share recipes that didn’t make the Kate’s Plate cut for our clients, but were still fabulously delish and worth trying in your home. Today we are featuring our Zucchini Cakes.  Zucchini are in season right now and are full of so many amazing nutrients; Vitamins A, B6, C and K as well as riboflavin, magnesium and potassium… just to name a few. You can serve these as a filling main dish for 4. Zucchini Cakes with White Bean Salad What you need: 3 medium zucchini 1 tsp kosher salt 2 green onions 1 egg 1/4 tsp black pepper 1/4 cup organic whole white wheat flour 1/2 tsp baking powder 3 tbs coconut oil 1 can organic chickpeas 2 cups cherry tomatoes 1/4 cup extra virgin olive oil 1/4 cup lemon juice 1/4 red onion 1/4 cup fresh basil 1/4 tsp sea salt 1/2 tsp black pepper 1 cup plain greek yogurt 1 Tbs lemon juice 1/4… (315) 527-5387
